Great for a Spring Tea Party Theme! The Strawberry Flowers are fun to serve with the Matcha Mint Cookies if they are rolled and cut into leaf shapes then substituted for the sprigs of mint in the Strawberry Flower Recipe.
This recipe written to makes 4 servings. We suggest serving 2-3 flowers per person.
- 2 teaspoons honey
- 12 large ripe strawberries
- 12 large fresh blueberries
- ¼ cup yogurt
- 12 sprigs of fresh mint leaves
Wash the strawberries and blueberries. Let them dry on paper towels.
Soften the cream cheese and honey and stir together until smooth and creamy. Form the cream cheese into 12 small balls the size of a large pea. Use them to secure the cut strawberries to a plate and to hold the mint leaves in place under the strawberries. Arrange them on the plate so that the strawberries are about 1″ apart.
Place the large, stem end of each of the strawberries into one of the cream cheese balls. Cut the strawberries into wedges, being careful not to cut them all the way through. Depending on the size of the strawberry, you might be able to cut 4 – 6 “petals”.
Fold the cut strawberry flower petals out far enough to insert a small dollop of yogurt – about 1 teaspoon for each. Then top the yogurt with one of the whole blueberries.
Decorate with small sprigs of mint leaves under each strawberry by sticking the stem into the ball of cream cheese. Serve immediately.
Use the Matcha Mint Cookie recipe to roll out and cut leaf shapes. Serve these with the strawberry flowers instead of fresh mint.
