Mock Devonshire Cream
This is an imitation of the traditional topping that originated in Devon County, England.
Makes 2 cups. Serves 6-8.
- ½ cup cream cheese, softened
- 3 Tablespoons brown sugar
- ¼ teaspoon salt
- 1½ cup whipping cream
- ⅛ teaspoon vanilla extract
In a large bowl, combine cream cheese, sugar, and salt. Mix well. Gradually add the whipping cream. This is most easily done with an electric mixer but it can be done by hand. Store covered in the refrigerator until ready to serve.
This is a traditional topping on warm scones. But there are many other uses, such as a dipping sauce for fresh strawberries.
